Almond Butter Cookies

Does your wish list for 2015 include eating in a healthier fashion? Say, hello to almond butter. (See my post notes to find out why.)  Straight from the jar or baked into a cookie, almond butter is awesome! (Do believe the younger people in my life have influenced my vocabulary choices!)

Chocolate Pocky Cake and Chocolate Buttercream

A smooth chocolaty cake blends with whipped cream. Crumbled Pocky gives the dessert a pleasant surprise crunch...Nuts are great additions to cake...But, Pocky is better!

Japanese White Bread

A crunchy golden crust gives way to soft bread. This white bread is very enjoyable with butter, a dollop of jam and coffee. If you want to replicate Japanese pizza toast, melt a few strips of white cheese and a fresh tomato slice or two.

Reduced Sugar Donuts

This New Year brings in one of what I hope many yummy but healthier goodies. The Ninja Baker's reduced sugar donuts are truly delicious...Added bonus: The donuts are gluten-free, too!

Yields 42 mini donuts. The toppings will each cover 12 mini donuts.

Paleo Pound Cake

Garnished with Paleo diet approved fruit or plain, this pound cake is surprisingly similar in flavor to Sara Lee! The texture is slightly more layer-cake like but that's good, too. Right?

Carrot Cupcakes

The wholesome goodness of carrots, apples and pecans provide a subtly spiced cupcake. Caramel glaze and mascarpone frosting bring in a splash of sweet contrasting texture and flavor.

Chocolate Chip and Mandarin Orange Cookie Bars

Chocolate Chip and Mandarin Orange Bars are studded with Mandarin orange bits and chocolate morsels. (I like to use a combination of semi-sweet and white chocolates.) The tasty bars are similar in texture to Blondies. Every time I share my Asian fusion Chocolate Chip and Mandarin Orange Bars, they vanish!
