What stirred Johannes Vermeer to paint his Girl with a Pearl Earring masterpiece? Why did Billy Joel compose Uptown Girl? Love. The same reason Crossroads Kitchen’s Chef Tal Ronnen took the vegan path and is now the maestro of exquisite plant-based cuisine.

Wanting to impress a cute vegan girl in high school, young Chef Tal traded his steaks in for soybeans. His infatuation may not have turned into marriage. However, Chef Tal’s flair for turning veggies into haute cuisine certainly caught the eye of Oprah. (America’s beloved chat show host.) And no wonder.

At Crossroads Kitchen, a cheese board with vegan Boursin and Brie served with dense nutty raisin bread had this writer swooning. Other notables are the horseradish spiked crab cakes made with apples. Considering they are dairy-free, the creamy cheesecake and coconut-based ice cream are also exceptionally delicious. Similar to the Japanese aesthetic, all plates are arranged to please the eye and stomach. Warning: You may find yourself falling in love with vegan cuisine after a visit to Chef Tal Ronnen’s Crossroads Kitchen.

有名人のヴィーガン調理人タル・ローネンの肉なしの食べ方のモチベーションは愛でした。高校時代の可愛いヴィーガンの女の子の心を捉える為に動物性の材料（卵、牛乳等）と肉を止めました。その可愛い女の子とは結婚しませんでしたがタルさんのベストセラーのヴィーガン料理本が出版されると、アメリカの有名人から注目されてきました。お父様は絵の評論家、お母様は画商で忙しい毎日でしたが、仕事が終わるとタルさんと一緒に高級なニューヨークのレストランでよく食事をしました。その時代高級なレストランでは野菜のみの料理はサイドメニューとして提供されていました。タルさんは野菜だけでも、メインメニューになるような、豪華で美味しい料理を作りたかった。そのために料理学校へ入りました。さらに、タルさんはなんども日本へ旅行し奈良の精進料理に魅力を持ち、自分の料理に取り入れたいと思いました。レストランは地中海の影響がありますがメニューには日本のセンスも入っていますので日本の方にもクロスローズ・キッチンは気にいっていただけるレストランだと思います。
