Japanese matcha meets the modern American latte.


Ancient Japanese poetry master, Issa thought matcha was so important that he wrote several haiku about green tea.
Here’s a favorite:

The tea smoke
and the willow
together trembling

茶の煙柳と共にそよぐ也

 

Simple green tea matcha plays straight man to a superhero healthy gluten-free banana muffin. 


Teas, whether Japanese matcha or English breakfast, evoke an air of sophisticated simplicity. Tea seems to create space. A cuppa, as the English say, promotes permission to take a minute to savor life. Sipping tea, for me, always seems to include drinking in  the beauty that surrounds me. A flower. My cat. The song of the birds. It’s a little ritual.

 

 
Pick-Me-Up Perfection:
Skip the soda, grab a cold can of green tea
And a handful of Glutino Pretzels dipped in yogurt and chocolate.


The Japanese tea ceremony, celebrates each step of creating the perfect matcha. Before matcha even kisses the rim of the Japanese teacup, the vessel is admired. The design and the origin of the teacup are discussed. That’s only the beginning. Every movement in the Japanese tea ceremony carries meaning. Including the sweet chosen to accompany the matcha green tea.

Side note: Freshly whisked Japanese tea ceremony matcha is frothy and thick. Green tea bag tea pales in comparison. (Of course, so does the price.) Matcha also has a bit of a bite. So, the sweet served at Japanese tea ceremonies are perfect complements to matcha.

Most of us don’t have time to brew up a masterful cup of matcha every day. Nor do we have easy access to the Japanese sweets served at the tea ceremonies. Nevertheless, we can still celebrate the day with special teas and gluten-free guilt-free (pretty) good-for-you treats.

Gluten-Free Superhero Healthy Banana Muffin

Your superhero self and child deserve a delicious start to the day. Skip the sugary cereals. Grab a Gluten-Free Superhero Healthy Banana Muffin sweetened with fresh fruit.  

Ingredients: 
  • 3 ripe bananas
  • 
6 T soft butter

  • 2 eggs, lightly beaten
  • 
1 tsp vanilla extract
  • 1 package Glutino Gluten-Free Pantry Muffin Mix
  • 1/2 cup coconut flour
  • 3 T flaxseed meal
  • 1/4 cup chopped pecans + more for muffin garnish
  • 3 T brown sugar
  • 3 T old-fashioned oats
Directions: 

Set the oven to 350°

In a kitchen stand mixer, beat together
 the 3 ripe bananas, 
6 T soft butter
, 2 eggs and 1 tsp vanilla extract.

Stir in:
1 package Glutino Gluten-Free Pantry Muffin Mix
1/2 cup coconut flour
3 T flaxseed meal
1/4 cup chopped pecans

With an ice cream scoop, divide the batter into cupcake case lined muffin tins. Sprinkle with brown sugar, pecan bits and old-fashioned oats.

Bake for 18 minutes or until a toothpick inserted in the center comes out clean.
