Frothy gingerbread lattes, tinsel and twinkling lights deck the halls at Christmas time. Neon reindeer prance through neighborhoods. Santa sleighs laden with the latest gadgets and gizmos are wrapped in colorful ribbons. The excitement of the season is almost palpable…

But choking up as Josh Groban sings of “angels bending near the earth to touch their harps of gold,” brings me back to the why of the season. The Silent Night or It Came Upon A Midnight Clear which slips over the radio waves is a loud wake up call to celebrate the one whose life was all about love. And to follow his mighty example.
Those who are familiar with the film about American soldiers and nurses during WWII might wonder why on earth I picked South Pacific for my holiday themed Sunday Supper. The movie does not exactly exude a whole lot of merry. But South Pacific does embrace and expound upon the miracle of love. Woven into an exquisite tapestry with the music of Rodgers & Hammerstein is a story of how love vanquishes prejudice and bigotry…Subjects dear and near to this Ninja Baker. I’ve experienced the stings of being excluded based on false assumptions. But also the balms of connecting to those whose hearts are open and willing to look past external differences...with love.

So, I offer you a tropical South Pacific coconut tres leche cake. The luscious cake is soaked in sweetened condensed milk, half-and-half and coconut cream; then chilled in the refrigerator. As this was my first time creating a tres leche cake I was like a child on Christmas Eve…A bit anxious and excited…Would the cake be too soggy? Or would the cake absorb the tres leche – three milks?

Happy to say a harmonious balance of cake and milk greeted my lips. The whipped cream with coconut filling and topping took it over the top…Dressed up with raspberries or blackberries, I’d say a South Pacific coconut tres leche cake is a lovely addition to the holiday dessert table.
