Longtime aficionado and seller of premium wines, David Wallace sees similarity in spirits and sweets: “It’s organic chemistry of the best kind.” In 2013, he opted out of hobnobbing over wines with prominent figures like Russia’s President Putin. On Father’s Day of that year, David opened the Hermosa Pie & Cake Company. With the exception of the Buddha in the backyard - reflecting his one-year at a monastery - everything else reflects a European influence. For starters, only Swiss and Belgian chocolates are used. David’s culinary savvy originates from his travels abroad. As a wine expert, David would trade bottles of premium alcohol for baking tips from lodge owners and chefs. True to his training, Hermosa Pie & Cake Company sweets are never made with preservatives. The desserts reflect the natural goodness of the ingredients. The bestselling apple pie is crammed with fruit in a thin crust. Sugar is only used a light sprinkle over the pie. Customers throng to the shop for the homemade cookies, too. David may have switched careers, but everything he sells is still a premium quality product.

Hermosa Pie & Cake Companyのパイでは果物が主役です。オーナーシェフのディビッド・ワルスさんは東洋の禅宗哲学と西洋科学の考え方を融合した素晴らしいパイを作っています。一年間伽藍暮らしをした影響から、自然を尊敬して保存料なしのお菓子を作っています。さらに長年、高級ブランドの担当でヨーロッパを回りました。様々な宿泊施設のお上さんからパイやケーキ作りを学びました。ディビッドさんにとって転職してシェフになることは自然なことでした。ワイン造りをする時に大事なことは主に科学と直感だそうです。パイとケーキ作りにも同じことが言えます。

Hermosa Pie & Cake Companyでは、食べ頃 の果物を薄い生地の中に入れて焼いています。無農薬の砂糖をちょっと振り掛けます。日本人の味覚にぴったりです。お勧めはアップル・パイです。チョコレートはアメリカ製の甘いブランドのものより高級で上品な味のスイスとベルギー製のものを利用しています。ワインの企業で働いていたことは華やかなキャリアでしたが、忙しくて家から離れることが多く、息子さんに会えないことが多かったそうです。２０１３年の父の日からベーカリーを開店して、息子さんと毎日仕事できることはディビッドさんにとって幸せなことです。
