Greek Chirashi Sushi, #SundaySupper

Chirashi sushi is a super easy to make Japanese meal. It's also the solution to little time and lots of people to feed. Like a My Big Fat Greek Wedding 2 potluck party. Greek chirashi sushi - my contribution to today's Sunday Supper - is a combination of Japanese chirashi sushi and Greek salad. Traditional chirashi sushi is a sprinkling (literally scattering) of fish and Japanese egg crepe over vinegar sushi rice. (The egg crepe can be made in minutes. Click here for the recipe.) When at a sushi restaurant and you can't make up your mind, chirashi is a great choice. You get a sample of a variety of fish. Plus, a lovely to look at artistic arrangement of sashimi fish and egg.



Mini Greek Chirashi Sushi

The joy of Greek salad is similar. A potpourri of Mediterranean flavors gathers on greens. My older sister introduced me to the salad shortly after I arrived from Tokyo to enter UCLA. The slightly salty olives, garlicky artichokes, feta cheese and crunchy salad toss still thrills years later...Japanese sticky white rice also never fails to bring on a smile. So, I scattered a Greek salad array of goodies across a sea of Japanese white rice. The result? A super tasty Greek Chirashi Sushi. But don't take my word for it. Try it and see for yourself.

Here's the How-To for Greek Chirashi Sushi:
Ingredients:

  • 1/2 cup feta cheese
  • 1/4 cup Greek olives
  • 1/4 cup green olives (stuffed with garlic almonds or pimento)
  • 1/4 cup cherry tomatoes
  • 1 kinshi tamago egg crepe sliced thin
  • 2 cups Japanese white sticky rice, cooked

Directions:

  1. Pack the rice into the bottom of a 10" bowl.
  2. Arrange the ingredients above onto the rice.
  3. Share and enjoy with family and friends.
