Matcha Ice Cream Teatime Sandwiches, #SundaySupper

“Teatime is more than a warming your hands with a mug of matcha.” So says my teatime aficionado friend, Marjorie. She’s right. It’s the heartfelt conversation which teatime seems to encourage. Whether the matcha is in a paper cup or bone China, the act of taking time to pour matcha (or substitute your favorite tea) allows beauty to appear. Even sorrows, when expressed are on their way to healing. Teatime also allows the space for telling the truth.

Hands clasped around mugs, my sister, my niece and I have gathered many times in the living room to celebrate and support each other. A higher quality matcha may have been served, but the dynamic remained the same when the three of us enjoyed afternoon tea at the Palace Hotel in San Francisco. (Our outfits though were drastically different. Silk blouses and skirts replaced sweat pants.) 

If in San Francisco, by the way, do spend the extra dollars for teatime at the Palace Hotel. The green tea matcha is amazing. The scones served with Devonshire cream and the sushi-grade salmon (aka lox) on pumpernickel teatime sandwiches are light and luscious.

Inspired by this week’s Sunday Supper sandwich theme, I created matcha teatime sandwiches. (Scroll down to see how to join the Sunday Supper fun.) What is a matcha teatime sandwich? Homemade matcha (no-churn) ice cream sandwiched between mini waffles.(You can also make or buy regular sized waffles and use a biscuit cutter to create minis.) Delighted to report that my homemade matcha ice cream is the creamiest ice cream I’ve ever made. Martha Stewart deserves the credit. I simply tweaked her vanilla no-churn ice cream to make the matcha ice cream.

Matcha Ice Cream Teatime Sandwiches

If you love Japanese matcha, honey, ice cream and waffles, this yummy teatime treat is destined for your dessert table. Add more matcha though if you love a bold matcha tea taste. A note of Japanese matcha breezes through the honey-laced ice cream. The American waffles create a welcome contrasting crunch.

The no-churn ice cream recipe is adapted from Martha Stewart.com.

Ingredients: 
  • 1 can (14 ounces) sweetened condensed milk
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons honey
  • 2 cups (1 pint) cold heavy cream
  • 3 tablespoons matcha powder
  • Homemade or store-bought mini waffles 

Directions: 

In a deep bowl, whisk together the condensed milk, vanilla, and honey.
In a kitchen stand mixer, beat heavy cream on high until stiff peaks form, 3 minutes. 


With a rubber spatula, gently fold whipped cream into condensed milk mixture. Pour into a 4 1/2-by-8 1/2-inch loaf pan lined with parchment paper. Freeze overnight. 


Make homemade waffles or toast store-bought waffles. Allow to cool.
Scoop matcha ice cream into the waffles.
