Gluten-Free Pumpkin Cake Donuts, #SundaySupper

After pouring over pages of potential budget-friendly goodies, I landed upon the site of King Arthur. Photos of their pumpkin cake donuts looked irresistible. Pumpkin cans are aplenty in the Ninja Baker’s kitchen. (Have you noticed canned pumpkin goes on sale during the holiday season?) Well, with their long shelf life, I stocked up.

Originally I set out to replicate the King Arthur recipe. Something felt off. The still small voice was talking. So, I listened. David, my husband, is a bit gluten sensitive and health conscious. He works very hard and deserves the best. Then, my heart ached for all the little kids today who are allergic to wheat, nuts and myriads of other products: Courtesy of certain corporations and their agenda to push toxic GMOs (genetically modified organisms) onto to the world market solely for financial gain. (Even though there ads make them look like saints!) While the American government may have turned the other way, countries like Japan and Australia ban GMO foods. Fans of pumpkin will find plenty of pumpkiny flavor in the Ninja Baker's gluten-free donuts.

So, what does this have to do with budget-friendly recipes? Everything! If we are willing to pay the extra twenty cents or even dollar for the organic, non-GMO  items, everyone will be healthier and spend less on doctors' bills. Translation: everyone will have more energy, pay less money for medical needs and more time to pursue desires of the heart.  Including spending more time with family around the Sunday Supper table! Okay, I’m hopping off the soapbox.

However, I am going to share how I turned a scrumptious “regular” sweet into an equally delicious gluten-free pumpkin cake donut. Japan’s Mister Donut also produces cake donuts which are firm (and beyond delicious! The chocolate is my favorite.) My gluten-free donut has a fluffy crumb. And sings pumpkin! My husband prefers it plain. But a dip or two in cinnamon sugar brings the donut all together for this Ninja Baker. As the French say, à chacun son goût (each to his/her own taste.) Gluten-Free Pumpkin Cake Donuts

Served plain or with a sprinkle of cinnamon sugar, these gluten-free pumpkin donuts are palate pleasers. The soft-crumbed donut sings pumpkin and celebrates the holiday season with panache.

Adapted from King Arthur.

  • ½ cup coconut oil + extra for preparing the donut pans
  • 1½ cups sugar
  • 1½ cups canned pumpkin (15 ounce can)
  • 1½ teaspoons pumpkin pie spice
  • 2 pinches of salt
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 3 large eggs
  • 1½ cups rice flour blend
  • ¼ cup + 2 tablespoons coconut flour
  • ½ cup sugar
  • 2 tablespoons cinnamon

Grease donut pans with coconut oil.

Set the oven to 350 degrees.

With a handheld mixer, beat the oil, sugar, pumpkin, spice, salt, baking powder and soda. Combine well. Add the eggs, one at a time. Gradually whisk in the flours. Once the batter is smooth, fill the wells of the donut pans. (3/4 full is perfect.)

Bake for 16 to 18 minutes or until a toothpick inserted in the donuts comes out clean.

Allow the donuts to cool for 5 to 10 minutes. Gently run a frosting spatula around the edges and remove.

Enjoy the pumpkin donuts plain or dunked in cinnamon sugar. (½ cup sugar whisked together with cinnamon.)
